Cookies


I've recently come upon, and slightly modified, a chocolate-chip cookie recipe that yields fat, bready soft goodness. Here it is:

Note: the recipe is already doubled, to yield about 45 cookies. I've learned from some of the best cookie bakers this side of Jupiter, and they all say, in chorus, that making a single batch of cookies is a silly enterprise. So make the double.

	1.5 cups brown sugar, packed.
	2 sticks of butter, softened.
	2 eggs
	2.5 cups whole-wheat flour
	3 tsp vanilla extract
	2 pinches ground sea-salt
        2 cups dark chocolate chips


	1. Mix the sugar and the butter until smooooth.
	2. Add eggs, mix until smooooooooth.
	3. Add vanilla and salt to the mix, stir. 
	4. Adding a bit at a time, mix in the flour. If you're using an 
	   electric mixer, make sure it's on a low speed setting. I don't 
	   know why this is -- maybe just an exercise in patience? 
	5. Once the whole deal is mixed and yummy (feel free to lick clean 
	   your mixing instrument), dump in the chocolate chips. Mix well. 
	6. Your oven is already pre-heated to 375F, as described in step 0 above. 
	7. Grease up your cookie sheets.
	8. Dole out the dough onto the sheets using spoon; these cookies rise 
	   a bit and spread pretty minimally. 
	9. Bake 10-12 minutes
       10. Let the cookies cool down on the cookie sheet for 3 - 4 minutes 
           before you take them off. After that, let them cool some more on 
	   a cooling rack if you have one. Otherwise, any flat surface will do. 
       11. Wash the dishes. 
       12. Set cookies out in a mountain-like formation on a plate; place plate
	   in conspicuous location in your home. Enjoy other people's discovery
	   of freshly baked goodness. 
       13. Thirteen is the lucky step: once you reach it, the universe will
	   smile upon you.
